An update on Fig Cookies

As I said previously, I found that the Fig Cookies improved immensely after letting them sit overnight.  This made me curious, of course, if they would improve further still if I added the chocolate and nuts that I had forgotten.  Seeing as how I still had the scrapes leftover from the initial rolling out, as well as bit of the filling left, I decided to experiment.


Rather then rolling out the dough again, I chose instead to shape it into a log and cut slice of rounds off.  Taking inspiration from thumbprint cookies everywhere, I made impressions and then filled each of the cookies with the fig mixture, finally topping the cookies off with three chocolate chips apiece.  I proceeded to bake and cool them before I tasted them, knowing now from experience that their flavor improves once cooled and allowed to rest.


I wasn't patient enough to wait until the next day.  These cookies now had chocolate and were calling out my name.  I was more then willing to answer their call.


You would not believe the incredible transformation that had occurred.  Although, since chocolate was involved, I'm not sure why I was so surprised.  Trust me, do not make the mistake of not at least trying these with chocolate.  These sneaky little cookies have been slowly creeping up on me, getting better and better, and I believe must now become a permanent fixture on my Christmas Cookie Platter.  Especially now that I have an even easier way to assemble them.  They may not look traditional, but slice and bake cookies are a heck of a lot easier to make then those you have to carefully roll out, and measure, and fill, etc.  Fig Thumbprints come to Momma!

My recommendation?  Use the recipe I originally posted, add some chocolate to the filling, and assemble them like a jam thumbprint cookie.  Trust me, you will not be sorry.

  2. I know! I'm totally in love with these cookies now. Quite a far leap from the so-so rating I had initially given them.
